By TL Bernthal. Sept. 11. Red Rocks Cafe in Birkdale Village will close Monday, Sept. 18, to Friday, Sept. 22,  as bar and patio remodeling takes place.

The restaurant will re-open Saturday, Sept. 23, owner Ron Herbert says. That Saturday is also Dressler’s last night of service and 20th anniversary celebration.

The work is part of an over $700,000 to $800,000 renovation that updates the inside with changes including a wine room,  a mural on the back wall, expanded patio and outdoor wrap-around awning.

The work has been delayed because of supply chain issues, Herbert says, and the restaurant may need to briefly close again to finish the project. Staffing issues, which plagued the restaurant industry during COVID-19 are mostly resolved, he says.

Red Rocks will update its menu changes as it strives to retain a sweet spot of good food and good service in the ever-changing Birkdale Village.

Birkdale will be home to more eateries than ever as restaurants, a wine bar and a brewery open in the coming months. The Cheesecake Factory recently opened and bartaco, across the street from Red Rocks, is under constrution.

Meanwhile, Dressler’s Birkdale will celebrate its 20th anniversary Saturday, Sept 23, and close after dinner service that night for a transformation into Fin & Fino, a social seafood house.

Jon Dressler and Herbert, who lives in Cornelius, currently are the only local restarateurs in Birkdale. Dressler’s Rare Roots Hospitality has other restaurants in Charlotte, including a Fin & Fino that will remain open. Red Rocks Birkdale is one of three establishments for Herbert and business partner John Love.

Herbert says steaks are the No. 1 seller at Red Rocks and he believes Red Rocks will the steakhouse of choice at Birkdale and Fin & Fino will fill the seafood category.
